The goal was to understand how different habits affect glucose levels, not to eliminate carbs or follow strict rules.

Blood glucose is the body’s main energy source. It rises and falls based on food, activity, and sleep. Insulin helps move glucose into cells. When blood sugar spikes too often, cells can become less responsive, leading to energy crashes, cravings, and other issues. A healthy response is a gentle rise after eating and a smooth return to normal levels.

Apple Cider Vinegar

The first method tested was taking about a tablespoon of apple cider vinegar diluted in water before meals expected to cause a spike. The effect was small but consistent. Post-meal glucose rose more slowly and returned to baseline faster on days the vinegar was used. Research suggests acetic acid can slow stomach emptying and improve insulin sensitivity.

Resistant Starch

The second test compared freshly cooked carbs like rice, potatoes, or pasta with the same meals eaten the next day as leftovers. The cooled and reheated versions produced flatter glucose curves. Cooking and cooling creates resistant starch, which acts more like fiber and slows glucose absorption. The key finding was that carbs did not need to be eliminated, only prepared differently.

Pairing Carbs with Fat, Fiber, or Protein

Rather than cutting carbs, the focus was on adding butter to potatoes, hemp hearts to oatmeal, or ensuring meals had enough protein. The continuous glucose monitor showed these additions softened spikes and prevented crashes. Whole milk cappuccinos worked better for blood sugar than skim milk versions, likely because the fat slowed absorption.

Eating Vegetables First

Starting meals with a salad or roasted vegetables created a fiber barrier that slowed glucose absorption from carbs eaten later. The data confirmed this worked well, but it was not always practical for sandwiches or restaurant meals. A high-fiber drink was used as a substitute when vegetables were not available.

Post-Meal Walks

The most effective method was walking for five to ten minutes after eating. After lunch or dinner, short walks kept glucose levels much lower. Meals that typically spiked blood sugar to 130-140 mg/dL barely broke 110 mg/dL when followed by a brief walk. Movement helps muscles absorb glucose without needing as much insulin.

The experiment showed that blood sugar responses are highly individual. The same meal can produce different results depending on sleep, stress, hormones, and activity level. The main takeaway was to focus on adding supportive elements like protein, fiber, fat, and movement, rather than cutting foods out. The approach was described as more sustainable and respectful of real life.
