Brazil study reveals most underrated daily habit for liver protection

A large new review of decades of research shows that drinking coffee may protect the liver. The study analyzed data from multiple published papers to understand the relationship between coffee consumption and liver health.

One of the most common chronic conditions today is metabolic dysfunction-associated steatotic liver disease, or MASLD. This condition, previously known as non-alcoholic fatty liver disease, affects about one in three adults worldwide. It is more common than type 2 diabetes. Over time, MASLD can lead to cirrhosis and liver cancer.

The review found that coffee drinkers showed lower levels of liver enzymes that signal cell damage. These enzymes include ALT, AST, and GGT. Coffee drinkers also had a reduced risk of fibrosis and cirrhosis, even among those with existing liver disease. The data showed up to a 40 percent lower risk of developing hepatocellular carcinoma, the most common form of liver cancer.

Additional findings included healthier gut bacteria and lower inflammation among coffee drinkers. The review also reported a 29 percent lower risk of MASLD, the most widespread chronic liver condition.

The effects appeared to be dose-dependent. This means drinking more coffee was linked to more protection. The strongest benefits were seen in people who drank three or more cups per day, which is about 24 ounces.

Researchers point to coffee’s bioactive ingredients as the reason for these effects. Caffeine can help activate the body’s own antioxidant defenses. Chlorogenic acids, a group of polyphenols, support liver health by regulating glucose and fat metabolism. They also reduce oxidative stress and protect the liver from damage. Diterpenes in coffee can help stimulate the body’s natural detoxification processes.

How coffee is brewed can affect its health benefits. Using whole, organic Arabica beans and grinding them fresh helps preserve flavor and antioxidants. Coffee beans can contain mold, so choosing brands that test for mold, mycotoxins, and heavy metals is recommended. Longer brewing methods, such as cold brew or French press, tend to extract higher levels of antioxidants. Espresso and pour-over are also good options. Adding too much sugar, milk, or creamer can reduce coffee’s beneficial effects. Adding protein powder or collagen can make the cup more balanced.

Research consistently shows that moderate coffee consumption supports overall health and longevity. Drinking around three cups a day benefits the liver as well as heart, metabolic, and gut health.
